• 1 tbsp chia seeds
• 1 tsp baking soda
• Pinch of salt
• 3 organic eggs
• 1/4 cup (2 oz) coconut milk
• 1 tbsp pure maple syrup
• 1/4 cup (2 oz) coconut oil, melted
• 1 tsp apple cider vinegar
Utensils:
• Loaf tin
• 2 mixing bowls
• Parchment paper
Let’s Make It!
1. Preheat your oven to 355º F (180º C) and line a loaf tin with parchment paper.
2. Grab two bowls: in one, mix your dry ingredients (almond meal, tapioca starch, flax meal, chia seeds, baking soda, and salt).
3. In the other, whisk your wet ingredients (eggs, coconut milk, maple syrup, melted coconut oil, and apple cider vinegar).
4. Combine the wet and dry ingredients, mix well, and pour the batter into your lined loaf tin.
5. Bake for 30 to 40 minutes, until the top is golden brown and a skewer inserted into the center comes out clean.
6. Let it cool for a few minutes in the tin, then transfer it to a rack to cool completely.
